In a military kitchen, female chefs show guts and glory
In a military kitchen, female chefs show guts and glory
Some may question why an Air Force general needs one personal chef, let alone a staff of three, but Tech. Sgt. Jennifer Medeiros is quick to defend why her work, cooking for the second-highest-ranking officer in the U.S. military, is important: “Food is a common ground for anyone in the world,” the chef says. “You can’t discuss multimillion-dollar affairs over Hot Pockets.”
It’s a tradition dating back centuries, that of generals of opposing armies sitting down together to break bread and broker agreements. “That meal helps build trust,” says Medeiros. “It establishes a relationship, a place to share personal stories so they can do business later.”
Medeiros has experienced firsthand the necessity of building trust. When she was deployed in Afghanistan, she had to navigate the local customs of a patriarchal society while scrambling to find canape ingredients in unfamiliar terrain. “When I got back to the U.S., I told my daughters, ‘You have no idea how lucky you are to be living in this country,’ ” she says.
In an industry and military that are both male-dominated — surveys indicate that about 14 percent of executive chefs are women, roughly the same percentage of active duty military who are women — female chefs are beginning to make their mark. As she places seared chicken on a platter of Israeli couscous dotted with sugar snap peas, blackberries and radishes for a spring luncheon, Medeiros says: “There’s a guy who was up for a job once that I got instead. He still gives me hell and says, ‘You got that job because you’re a girl.’ I got that job because I was qualified. There are opportunities; you just have to go for it.”
Frida Karani, a petty officer first class in the U.S. Navy who is also Medeiros’s co-worker, agrees: “Nowadays, women are giving men a run for their money. Equal opportunity and hard work always pay off.”
She should know. In March, Karani won the Armed Forces Chef of the Year competition, becoming only the second woman to win in the event’s 41-year history. (Army Sgt. Sarah Deckert was the first, in 2014.) Working with a basket of mystery ingredients, Karani wowed the judges with the four-course menu she developed that included seared red snapper and fried smoked oysters served with gnocchi in a clam-tomato broth. “The competition was pretty tough,” acknowledges Karani, 35, a classically trained chef who first studied culinary arts in her native Kenya. “All the chefs were very well trained.”
Says Medeiros: “I knew she’d kill it.”
[Make the recipe: Couscous Salad With Summer Fruit and Arugula]
Intense training both in and out of the military has helped these women distinguish themselves. Karani began by studying cooking at Kenya Utalii College and eventually came to the United States through an exchange program that led her to Le Cordon Bleu in Orlando. Medeiros, 34, a two-time Enlisted Aide of the Year, has trained with the American Culinary Federation and the Culinary Institute of America. Recently, when Medeiros collaborated on a dish with Washington chef Robert Wiedmaier for an event in support of Blue Star Families, an organization that works to ease the transition from military to civilian life, Wiedmaier noted that kitchens, whether civilian or military, share a common ground: “It’s called the brigade system,” he says. “There’s a ranking structure, just like in the military: chef, sous-chef; general, colonel.”
Such connections were not even on the radar for the Mississippi-born Medeiros 16 years ago, when she joined the U.S. Air Force at the age of 18, but something else became instantly apparent to her: “I didn’t know how to act,” she says. Starting off as a dining hall cook pushing out mass quantities of cafeteria-style food, she found herself surrounded by people who seemed uninspired by their work, so she decided to become a dental technician — which unexpectedly led her back to the kitchen.
“The dentists were officers,” Medeiros explains as she sears chicken breasts on a professional range at the home of Gen. Paul Selva, the vice chairman of the Joint Chiefs of Staff, at Fort Myer, just outside the District. “It gave me a chance to learn how to conduct myself around officers.” That experience led her to cater retirement receptions; then a friend recommended that she apply for a position as an enlisted aide, a job that entails managing the general’s household, particularly planning and cooking for events. “I had never even seen, let alone spoken to, a four-star general before,” she says. “It was intimidating, but I was now dealing with professionals, who were also professional with me.”
For Karani, who worked in several Kenyan restaurants and as a saucier at the Hyatt Regency in Dubai before coming to the United States, it’s familiar territory. But it was a revelation for Medeiros, who has worked her entire adult life in military kitchens and is preparing for a move into the civilian sector in a few years. Walking into Wiedmaier’s fine-dining restaurant Marcel’s was scary, she says: “I had no idea what to expect. Now I know that these kitchens all pretty much operate the same way.”
Back at Fort Myer, Medeiros and Karani create meals for Selva and visiting dignitaries here and abroad on a team led by chef and Senior Chief Petty Officer Wesley Tavares. The job means working closely with the general’s family members, who are often also involved in the interview process. When a dinner party is on the horizon, Ricki Selva, the general’s wife, and the aides start planning the logistics, using Pinterest to gather ideas for table scapes, plating and menus. As one might imagine, rank is of the utmost important when creating seating arrangements for a military dinner party, although the Selvas prefer to sit in the center, rather than at the head and foot, of the table.
Because Ricki Selva likes to choose themes for these events, the staff is continually challenged to test new dishes and search for ingredients at local ethnic markets. “She might be inspired by Napa Valley or Hawaii,” says Medeiros, “and then we build food and decor around that.” For a dinner with a Moroccan theme, the aides created a low table surrounded by floor pillows in bright fabrics and a menu highlighted by chicken tagine with preserved lemons. “It’s never the same theme twice, and that makes it fun,” says Medeiros. It’s also an opportunity for Karani to share the recipes she learned from her grandmother, such as a fish stew with coconut rice. “I often try to incorporate Kenyan cuisine with my cooking as a nod to my heritage,” she says.
Although it’s nice to cook in a well-equipped kitchen with a panoramic view of the Washington skyline, enlisted aides are expected to travel at a moment’s notice and can be gone for weeks or months at a time, cooking on airplanes or in less-than-ideal conditions. Medeiros spent four months in Afghanistan in 2011 when working as an aide to Gen. Mike Hostage and Gen. David Goldfein during a change of command, which at one point required her to cook — alone — for eight events in seven days, sometimes for hundreds of guests. “There weren’t a lot of supplies and equipment,” Medeiros says. “I had to get very creative, and I had to get people to trust me.”
In a military environment, where rank is all-important, the E-5 status that Medeiros had at the time — which she likens to that of a “worker bee” — was a disadvantage, which was compounded by her being both a woman and a chef. “It was difficult to find help, because no one knew what I did,” she recalls.
After two months of networking, Medeiros began to get some support in terms of transporting food and supplies for events, but she still faced challenges in obtaining ingredients. She traveled off base to round up honey, fresh herbs, spices and olive oil while continuing to build trust with military staffers, who donated supplies. “I would bring in big bowls of homemade guacamole and chips, homemade granola and cake,” says Medeiros. “It created something to look forward to, broke up the monotony and brought us all together.”
She also discovered the significance of learning local food customs. But for female chefs, that also sometimes means not interacting with guests who come from regions of the world where having a woman serve at the table might be disruptive.
“It is my duty to create a harmonious and stress-free environment so that business can be conducted in a way that reaps trust and integrity,” Medeiros says. “It’s about the mission, not me.”

COUSCOUS WITH SUMMER FRUIT AND ARUGULA
10 servings (makes about 20 cups)
This refreshing, crowd-friendly, warm-weather salad is a favorite lunch or light supper dish among the chefs who work for Gen. Paul Selva, the vice chairman of the Joint Chiefs of Staff.
The ingredients can be changed to whatever is in season at the moment, and the combination of fresh fruit, spicy arugula and salty feta creates unexpected layers of flavor in a seemingly simple dish.
Serve on its own or with grilled chicken or salmon.
MAKE AHEAD: The vinaigrette can refrigerated for up to 2 weeks. You’ll have plenty of leftover balsamic glaze, which also can be refrigerated for up to 2 weeks; try it on grilled vegetables and grilled-fruit desserts with ice cream.
From U.S. Air Force Tech. Sgt. Jennifer Medeiros.
Ingredients
For the vinaigrette
3/4 cup olive oil
1/3 cup red wine vinegar
1 heaping tablespoon Dijon mustard
1 small clove garlic, minced
Salt
Freshly ground black pepper
For the balsamic glaze
1 cup balsamic vinegar
1/2 cup sugar
For the salad
5 cups no-salt-added vegetable broth (may substitute chicken broth)
4 cups dried Israeli (pearled) couscous
Olive oil (optional)
5 ounces baby arugula (6 cups)
1 scant pint fresh raspberries (2 cups)
1 scant pint fresh blackberries (2 cups)
1 scant pint fresh blueberries (2 cups)
2 cups halved cherry tomatoes
2 cups diced seedless cucumber (from 1 English cucumber)
2 cups crumbled feta cheese
Steps
For the vinaigrette: Whisk together the oil, vinegar, Dijon mustard and garlic in a medium bowl until emulsified. Season lightly with salt and pepper. The yield is a generous 1 cup.
For the balsamic glaze: Pour the vinegar into a small saucepan over low heat, then stir in the sugar until it has dissolved. Cook for about 20 minutes, stirring occasionally, until reduced by half to form a thick and syrupy glaze. Let cool to room temperature. The yield is a generous 1/2 cup; you’ll need 2 tablespoons for this recipe; the rest can be refrigerated for up to 2 weeks.
For the salad: Bring the broth to a boil in a large pot over medium-high heat. Stir in the pearled couscous, then reduce the heat to low, cover and cook for 8 to 10 minutes or until the liquid is absorbed. Stir well and allow to cool to room temperature; keep stirring every so often as it cools. You can add a little oil if the couscous starts to stick together.
Once the couscous has cooled, transfer it to a very large serving bowl. Add the arugula, all the berries, the cherry tomatoes, cucumber, feta and vinaigrette; toss gently until evenly coated and incorporated.
Drizzle the 2 tablespoons of balsamic glaze over the top. Serve right away.

I'm actually surprised
by how soon Anthony Scaramucci is picked so soon after Mike Dubke left his post
and I'm also surprised that Donald Trump did not do an internal pick for this
position of new White House Communications Director. Maybe Scaramucci will surprise
yet something makes me wonder why Donald Trump did not hire from within for
this position.
I’m willing to bet
that Trump Legal Team spokeman Mark Corallo knows more a great deal about what

Janet actually made my day by helping to give me the idea and positive confirmation to follow through on studying public relations/marketing/advertising online by September 2018. The following website link and Janet's mature comment.
comment from me
I have to hand it to Selena Gomez. She has both forged a highly successful music career for herself. Additionally, she has overcome the public judgment of the relationship she had with another highly accomplished musician Justin Bieber who it appeared she loved alot and she seems happy with another highly accomplished musician Weeknd who in turn seems to also mutually love her. It is actually challenging for me to rate which of the three musicians (Justin Bieber, Selena Gomez, andor the Weeknd) are the most talented/successful/accomplished as each of them have created some creative and enjoyable songs.

Are you their publicist?
my response to Janet approximately 5 minutes ago
@Janet Hi Janet, I appreciate your mature and calm response even if you do disagree. I admit that no i am not their publicist but I am a woman who is strongly interested in public relations trends and is considering taking online classes related to public relations/marketing/advertising. I thank you for your mature comment because you actually helped to make my day into researching more into following through on studying public relations/marketing/advertising online by September 2018. I also wish you the best Janet and I appreciate you taking the time to reply to my comment.
First off, I personally do not believe that any person, group of people, life challenges etc. are worth taking your life over/committing suicide no matter how challenging your life may be. However, as someone who has survived and endured multiple life challenges and found a way to turn these vehicles of pain into beneficial opportunities for creative and spiritual evolution I can still easy understand why a man or woman might be either tempted to take their life or even follow through. I can also easily understand why someone might turn to suicide because I use to secretly wish that I could die even as a much thinner teenager in the 1990s until fortunately I found my healing and salvation through my spirituality by the time I was in my 20s. As a result, I do have compassion and think it is beyond tragic that Chester Bennington formerly of Linkin Park, Chris Cornelll of Soundgarden, and some popular Spanish Hunter by the name of Melan Capitan committed suicide most likely for various reasons (i.e. each was a suicide but most likely each person had a different reason(s) for killing themselves). Still, as a woman with multiple blessings and who has learned to transform her depression and life challenges into creative fuel for artistic aspirations I can easily understand how other people may say that is still easy for me to say but I still stand by my belief that there is no circumstance of person worth killing yourself over. However, I am no therapist but I do agree with Brian Welch that if you are pondering suicide then do anything you legally have to in order to keep going in life because I do understand that not everyone has the same access and opportunities to getting the mental help andor spiritual support to see that there are better ways to turn life’s challenges around other than just suicide. For those who need more therapy andor spiritual support but who might be strapped for cash, have scarce limited andor non-existent support from family members andor friends etc, do what you have to in order to get volunteer more andor nurture yourself such as through exercise such as even walking outside, listening to your favorite music, reaching out to a church, watching some of your favorite television shows andor movies, reading books you can afford andor books you can check out from a library, writing either online andor offline, cleaning about your living space, doing tasks andor pursuing goals you can control etc regardless of what others may say or judge about your efforts. I also believe that Brian Welch was only coming from a well intended place when he posted his thoughts on suicide and Brian Welch is probably just processing his hurt and pain from seeing two men that he most likely admired turn out differently than he expected and Welch probably did not expect either of them to commit suicide. I am done posting for at least the next three hours as I intend to follow some of my own advice and get outside to do at least a little walking and listen to some of my favorite music within the next 18 minutes or less.

The Weeknd took a 12-hour flight just to have a birthday lunch with Selena Gomez and More News
https://www.yahoo.com/news/weeknd-took-12-hour-flight-004009660.htmlFirst off, I personally do not believe that any person, group of people, life challenges etc. are worth taking your life over/committing suicide no matter how challenging your life may be.

I preface this comment by admitting from the get-go that my
comment may be biased as I am a survivor of being raped as a child around the
time I was around 5 or 6 years old. However, the difference was that my
biological mother was the one who actually gave me to the rapist knowing what
was about to happen. I only realized that this was not my fault until after my
late adoptive mother took me in around the time I was 7 years old and helped me
see that this was not normal for mothers to do. As a result, it will be nearly
impossible for me to be an unbiased juror if they were making selections for
child rape cases. However, I am glad
that the North Carolina mom alerted authorities right away to shield her
daughter from further harm. If Brentley Jason Breyers is confirmed guilty then
he needs to stay behind bars for life at a minimum without any chance of
parole. A man that would harm a seven year old like that would most likely harm
another child if given the chance during his current lifetime and so he must be
kept away from any further children if he somehow slipped through the cracks
and was paroled. I do believe that some
of the potential jury people that preside on Brently Jason Breyers case needs
to be biological parents who care for their kids andor adoptive parents, at
least part of the jury pool in order to increase the chances that Breyers gets
a punishment that is fit for the violence that
he inflicted on a seven year old child’s soul. That seven year old girl
will never be the same even if she gets the help she needs and if Breyers is
found to have raped this girl then he must definitely be held accountable for
what he did.

As a woman who has enjoyed living in the Washington D.C.
area since May 2010 along with my husband who also likes living in the
Washington D.C. area (since June 2010) I have turned to multiple Washington
D.C. area media sources such as Washingtonian magazine, Washington Post etc. I
have been an online digital subscriber to the Washington Post (Sunday delivery
edition) and I intend to reactive my subscription by this September or sooner. I
notice that the Washington Post is popular to the point where I have an online
digital subscription to the Virginian Pilot and they have a built in online
digital option of subscribing to the Washington Post for certain subscribers of
the Virginian Pilot. My point, even with President Donald Trump’s influence and
fame, his actually referencing the Washington Post, whether positive or
negative, actually benefits the Washington Post in further popularity. I
reluctantly admit this yet even I can see it is partially because of Trump
referencing them frequently from what is mentioned in this article. My point;
as someone who has subscribed to the Washington Post before there are actually
a multitude of informative articles that the Washington Post puts out and I
have looked at articles from both Washington Post and the Washington Times to
broaden my understanding of how various situations are viewed politically. My
point-obviously Trump is allowed to say whatever he wants about Jeff Bezos of
Amazon and Washington Post. However, Trump’s mere referencing of them whether
positive or negative actually helps Washington Post’s popularity (coming from a
woman who keeps an open to looking at both articles from the Washington Post,
Washington Times, having an active online digital subscription of the Los
Angeles Times, and having an online active digital subscription of the
Virginian Pilot) .

I have purchased magazines from Forbes before and there was
a time in my life where I use to visit the Forbes website multiple times and so
I am coming from a place of seeing the good in Forbes magazine when I comment
on this yet I must say this; Forbes put out an informative list of jobs as I
see even jobs such as nuclear power reactors and air traffic controllers have
employment equivalents in the U.S. Navy. However, this is partially my point;
Forbes has a list of good jobs it is just that these also look like jobs that may
require some career experience. No, I did not work in the job fields available
on the enlisted side in the navy that are equivalent to the nuclear power
reactors as even I have some awareness of where I would be over-reaching. I
chose to cross over to naval supply by June 2002 and passed up an opportunity
to work in the intelligence field when an E-6 Intelligence Specialist came from
the heart around 2001 to try to get me to consider a career field as an
Intelligence Specialist, a decision that has cost me even to this day (not
taking the E-6 Intelligence Specialist’s offer to mentor me towards working as
an intelligence specialist) as obtaining supply jobs even in the Washington
D.C. area are highly competitive. I have tried to be down to earth by simply
trying to increase my income by aiming to stay at my current job while trying
to pick up a related second job. However, the hiring manager affiliated with
the related job interview for me to try for a second job seemed naturally
conflicted about choosing me (I could see it on his face) when he sensed that I
was hesitant to voluntarily leave my current job for his job and instead have
his job as a second job if he selected me. In his defense, he was polite to me and
willing to give someone a chance even if their experience was limited but I
could sense that he wants either someone who is willing to voluntarily leave
their job for his job andor someone who is looking for a job and is willing to
step into that job with complete flexibility. My point-even when I listened to
others by setting my sights on a practical level as advised by others I either
run into an employer who is open-minded in giving someone the job just not as a
second job andor an employer who prefers someone with either the experience
andor prestigious career success. As a result, short of me trying to get a job
overseas, I feel like the only other options are for me to look into further
schooling and volunteering to make myself more competitive. In Forbes magazine
defense I notice that they are doing their best to write articles that are
tailored to both hiring managers and separate articles for job seekers.
However, media articles are still scarce on job search catch 22’s-trying to get
the jobs available that are at least
open to job seekers without the experience and education but require the
prestige of career success andor willingness to be discreet about side hustle
andor second job aspirations andor jobs where you do not have to hide aspirations
for doing a legal side hustle andor second job but require experience. I
realize that I only have myself to blame for this catch 22 that I
unintentionally created as no one held a gun to my head and forced me to voluntarily
leave a financially comfortable career in the U.S. Navy back in 2009 making at
least 3 grand a month after taxes for career uncertainty. Additionally, I keep
getting intuitive and logical promptings to consider applying to supply jobs in
overseas federal job billets in either Africa, Europe, Asia etc. but I feel
conflicted about following through with relocating overseas deep down partially
because I see how content my husband is and I’m already aware from previous
experience that a long distance marriage for greater financial security has
both potential financial payoffs but also challenges to my marriage even with
me being voluntarily child-free (I have nothing against parents or kids I am
just describing my career profile that justifies at least my ability to
relocate overseas if I ever took concrete action to do so). My point; Forbes
has done both a well-meaning and good job with these article of jobs that do
not require a 4 year college degree but even a woman like me knows that for
most of these jobs the hiring manager will only give you the time of the day if
your experience at least somewhat matches these jobs. I reluctantly accept that I might die before completely
paying off my student loans but I am more at peace and accepting of that
reality now as compared to not being as accepting of that potential reality
back in May 17, 2017. However, this does not stop me from still trying to do
what I have to career wise to repay my student loans by 2035 or sooner (which
is why this article reminds me why I must comb through the volunteer
opportunity kindlebook that I purchased through Amazon within the next 26 hours
or less of posting this comment).

Jeff Daniels could say whatever he wants about the Ford Carrier posing a risk. To be fair, his article is informative, but I know from firsthand experience how even just one aircraft carrier in Norfolk Virginia brings a multitude of jobs to the civilian population as well as military people. For instance, during my time on the USS Eisenhower there were times that many men and women stationed on the Eisenhower aircraft carrier that had to help the navy cooks with food stores. I remember at least one time where myself and various other people were helping the navy cooks haul the food stores on to the ship and there were civilian workers also helping with food supply onloading-i.e. my point of one aircraft carrrier equaling jobs for both military men and women and men and women outside of the military but still affiliated with the federal government andor the navy.
